- 1 lb pigtail, soaked
- 2 lbs fish fillets (snapper)
- 6 hard-boiled eggs
- 2 large sweet potatoes, peeled and quartered
- 4 large potatoes, peeled and quartered
- 6 green plantains, peeled
- 1 lb cassava, peeled and chunked
- 1 can coconut milk
- 2 tomatoes, chopped
- 1 onion, chopped
Instructions
Boil pigtail until tender. Discard water.
In a large pot, boil ground foods (cassava, plantains, potatoes) until fork-tender. Drain.
In a separate pan, create a tomato sauce with onions, tomatoes, and coconut milk.
Assemble the pot: Layer the ground foods, fish, eggs, and pigtail. Pour the tomato sauce over everything.
Simmer for 20-30 minutes for the flavors to meld. Do not stir, just let it bubble.
